Chocolate-Dipped S'mores

Everyone loves s'mores. Everyone loves chocolate. So, here is a recipe from http://www.tipjunkie.com/all-crafts/smores/ for easy chocolate-dipped s'mores.

Ingredients:
  • four graham crackers
  • four large marshmallows
  • chocolate chips
  • sprinkles (optional)
Directions:

1. Break the graham crackers in half and put them on a plate. Add a marshmallow to four halves, and top the other four with chocolate chips.
2. Warm up the plate of marshmallow-crackers for about 10-15 seconds, but watch to make sure they don't explode or anything.
3. Warm up the chocolate-crackers for 25-30 seconds, or until chocolate melts. Top marshmallow-crackers with chocolate ones, and stick in freezer for about 5-10 minutes.
4. Melt about 1 cup of chocolate chips in the microwave (30-35 seconds) and scoop over s'mores. Add sprinkles or any other topping you want, like crushed cookies, and enjoy!

Welcoming Fall with Pumpkin Waffles

I found this pumpkin ginger waffle recipe that I'll have to try sometime. Here's the recipe:

Ingredients:

1 1/4 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tsp ground ginger
1/2 tsp cinnamon
1/4 cup finely chopped crystallized ginger (aka candied ginger)
2 large eggs
3/4 cup buttermilk
1/2 cup canned pumpkin puree
1/2 cup sugar
3/4 tsp vanilla extract
3 tbsp melted and slightly cooled unsalted butter

How to make them:

1. Mix flour, baking soda, baking powder, salt, ground ginger and cinnamon in a large bowl. Toss 2 tbsp of this mixture with the crystallized ginger and set aside.

2. Whisk eggs, pumpkin, buttermilk, sugar and vanilla, and mix with flour mixture. Add butter, and fold in the crystallized ginger.

3. Heat the waffle iron, and use 1/2 cup batter for each waffle.

Floppy hats, Easter baskets, and Cookie Chicks

First, HUZZAH for floppy hats!! Nothing says tres fab like a nice, big, floppy hat. I got my first one today, and it won't be the last. It reminds me of the Coca-Cola commercial with "Lola" and David Beckham.

Second, as I promised, Home-made Easter Baskets are here. Attach tissue paper to a cotton candy container, tape a ribbon on the inside, and get ready to egg-hunt!
